Tossed Chicken and Baby Potatoes

Ingredients:
*Baby Potatoes
*1 Chicken Fillet (slices)
*Half tbs Coconut Oil
*Rocket / Spinach
*Baby Tomatoes
*2/3 stems of Broccoli
*Sliced Onion
*Sliced Pepper
*1 tsp Paprika
*Sprinkle of Chilli Flakes

Method:
Prick some holes in the potatoes then cook in the microwave for 8mins …. yes, potatoes in the microwave! Trust me 🙂
Stir-fry the chicken in coconut oil until it begins to turn brown then add onion pepper and fry for 1 minute then remove from heat.
Remove potatoes from microwave when finished, cut them in half and add to the pan then fry for 3-4 minutes or until brown.
Add broccoli, spinach/rocket, tomatoes, paprika and chilli flakes, toss about and enjoy!
